The BEST Chocolate Chips Cookies you ever did have!

Who doesn’t love a soft and gooey Choc Chip Cookie, that's easy to make and not much cleaning up after? Then look no further!

These cookies got me and my fam through the NSW lock downs in 2020 and 2021 (oh and don’t my hips & thighs know it!). It is also our welcome treat when Elfie (Elf on the Shelf) arrives on Dec 1 and Santa arrives on Christmas Eve night, and they both have told me it is AH-MAZ-ING (and they don’t lie!)

I have tried a fair few over the years, and between being too sweet or not soft enough, I decided to create my own and after a few trial and errors, I landed on this one and seriously IT.IS.THE.BEST! With 2 kids I wanted a cookie that wasn't too sweet so I have less sugar than most recipes (I sometimes reduce it further if I think my kids have had too much sugar that week already) and I use dark choc chips to reduce the sugar further but still have that yummy chocolately goodness.

You can make a batch and eat straight away or double/triple/quadruple the batch and make some now and freeze the cookie or cookie dough for later. It is super easy, flexible and quick to make and uses only one bowl, so yay for the cleaning up! In no more than 25 minutes you have these pieces of delicious-ness out of your oven and cooling down.

The hardest part of this recipe is not to eat them all whilst they are still cooling! So pop a batch on for your next party or just ‘cause (who needs a reason to have cookies), and let me know what you think!

Soft Choc Chip Cookie

The BEST Chocolate Chips Cookies EVER!

Total Time: 25mins | Makes: 12 cookies

INGREDIENTS

  • 8 tablespoons of salted butter
  • 1/4 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 1/2 cups all purpose flour (more as needed – see below)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup dark chocolate chips

METHOD

1. Preheat the oven to 180 degrees (fan-forced)

2. Microwave the butter so that it is entirely liquid – but make sure not hot, approx 30seconds, but depending on your microwave may be less and may need to do in 10second bursts like my new one because it is all kinds of temperamental.

3. With an electric mixer, beat the butter with the sugars until creamy.

4. Add the vanilla and the egg and beat on low speed for 10-15seconds, until just incorporated.

5. Add the flour, baking soda, and salt. Mix until crumbles form. Press the crumbles together into a dough using your hands and form into a large ball. If the dough feels too wet add more flour. You want the dough to be right between a "wet" dough and "dry" dough, so it is not too sticky it sticks to all your hands, but not too crumbly it doesn't form into a large ball.

6. Add the chocolate chips and incorporate with your hands.

7. Roll the dough into 12 large balls and place on a cookie sheet and slightly push the top of the cookies.

8. Bake for 9-11 minutes until the cookies look puffy and dry and just barely golden. DO NOT OVERBAKE. This is essential for keeping the cookies soft. Don't be tempted to leave them in the oven because they aren't golden yet, they will turn golden as they cool.

9. Let them cool on the pan for 30 minutes (the hardest step in my opinion, as you just want to eat them right away!)

10. Pop them onto a cooling rack, and once completely cooled pack in an air tight container.

They can keep for 2-3 days (but pretty sure they won’t last past the first 24hours!). You can freeze any leftover baked cookies in the freezer, or if you have spare cookie dough you can freeze that also. Just wrap tightly in Glad Wrap and pack in a Ziploc Bag removing as much air to avoid freezer burn.  It really is that simple, my kids even help me make these. My husband who generally isn't a soft cookie fan, can't get enough of these.

Chocolate Chip Cookie

Some ideas for these beauties once cooked:

1. You can pack these up as party favours and pop them into party bags. Just wrap them in some coloured cellophane and tie up with a nice ribbon and you have got an easy and delicious addition for party bags. 

2. Serve them on a nice platter as a delicious treats for a birthday party or baby shower or any celebration.

3. As I mentioned it is our go to welcome treat for Elfie & Santa as well as the Easter Bunny, because you know these guys need a reward for all their hardwork!

4. Freeze leftovers and add them into school lunchboxes. Just take them out of the freezer in the morning and pop them into your child's lunchbox and by lunch they will be defrosted and ready to eat. 

5. As an afterschool treat. Just take out of the freezer during the day defrosted and ready to eat when the kids get home.

6. Or just have them anytime - who needs a reason to have cookies!
